Lunch: My low Carb moussaka! :D
Ingredients (2 servings): For the filling: 20% fat Lamb mince, half a small red onion, 1tbsp tomato paste, 2tbsp tomato pasata, grated nutmeg, dried mint leaves, dried Basil, 1tsp minced garlic, 1/4 tsp red chilli flakes, 1 small Aubergine sliced into rings about half an inch thick.
For the creamy topping: 2 tbsp full fat cream cheese, 1tbsp creme fraiche, 2tsp coconut flour, 1 large egg, grated nutmeg, half a tsp cinnamon, salt and pepper.
To finish: grated mature English cheddar cheese, salt and pepper to season.
Assemble the ingredients into a oven proof dish. First a layer of Aubergine. Cooked filling, then more Aubergine and then pour over the combined creamy topping ingredients.
