Lunch at work 🍳🍳Abruzzese salad which contains; flamed Italian tuna, buffalo mozzarella, green beans, sweet peppers, baby plum tomatoes, Italian leaves, new potatoes, (usually anchovy fillet slices - but I weren't feeling it), soft boiled egg and croutons, drizzzzzzzzzzzled with a light vinaigrette 😍🙌🏼ticks all the boxes for nutrients, perfectly balanced, was content after eating this and so should you... Chicken and potato bake I did last week 🍲🌿so I did this with baking potatoes (oval slices) you can use sweet potatoes aswell to sweeten the dish up, chicken breasts, crispy bacon, mushrooms, red onions, garlic, mozzarella, cheddar cheese, fresh parsley, some cream and a dash of paprika/pepper/dried parsley! You layer it as if it was a lasagne... so I did the potato slices at the bottom with the half the filling inside, topped with more slices of potatoes, the other half of the filling then topped with potato slices and cheese.... 😍lovely winter warmer. Preferences are yours, I chose these ingredients as they work well together.
